Abby, Sounds to me like you are going to be hosting a very interesting blog…how can anyone NOT be interested in health? I’m looking into the Paleo diet. Any opinions on that regime?

I’m a fan of the paleo diet. It just makes so much sense.
Evolution moves r-e-a-l-l-y slowly. The human body is basically the same as it was hundreds of years ago, but the Standard American Diet (aptly referred to as SAD) is vastly different than how our ancestors ate. Frozen, microwaved, highly processed and full of unpronounceable chemicals….our bodies don’t even recognize this as food.
I believe eating closer to nature – real, whole foods – is what our bodies crave to be healthy. Eat simply, with plenty of raw fruits and vegetables, and use traditional cooking methods when you do cook your food. Microwaves are convenient but they change the molecular structure of the food and your body may not recognize (and be able to use) the stuff you’re ingesting. And we don’t really know the long-term effects of eating microwaved food, so I discourage their use. But that’s a topic for a different post.

One of the best things I did for my health was going on an elimination diet about 8 years ago. The purpose was to discover food allergies and sensitivities, which I did. It was very similar to the Paleo Diet, and although it was a little hard to stick to (no convenience or fast food), I never felt better!
Good advice, although “elimination” diet is an unfortunate name… 🙂
